My Chicken Alfredo Lasagna has consistently been one of my most popular recipes, but sometimes even an easy lasagna feels like too much work (and wait). So I was inspired to create an even simpler and quicker recipe that allows you to enjoy the deliciousness of chicken alfredo. So I tested and developed this flatbread recipe and I am so happy with how it has turned out!

Components of chicken alfredo flatbread
This easy chicken alfredo flatbread is made of a 4 simple components:
- Bread: To make things easy, this recipe uses ready made bread as the base. I used 2 packs of King's Hawaiian's original Hawaiian sweet rolls, which I divided into 2 halves each. But you can get creative and use other kinds of bread too, like ready made pizza crust, frozen naan, or ciabatta rolls
- Spinach alfredo sauce: The bread is topped off with a delicious, creamy and cheesy spinach alfredo sauce. It is a roux-based white sauce with spinach and parmesan cheese, and comes together in just 10 minutes
- Grilled chicken: On top of the sauce goes lots of juicy grilled chicken seasoned with salt, pepper, paprika, garlic powder and Italian seasoning
- Cheese: Finally, shredded mozzarella cheese is added on top of the flatbread for the very necessary cheese pull

Process with photos

Coat the boneless chicken in the oil and seasonings, then grill until cooked through and slightly charred. Cut into cubes and rest:
In the same pan, sauté finely chopped onion until golden. Then add garlic and the seasonings, and stir for 1-2 minutes until fragrant:
Add flour and toast for a few seconds:
Now add milk and cream, and cook until the sauce starts to thicken up:
Finally, stir in grated parmesan cheese and chopped spinach:
To assemble, lightly toast the bread and top it off with the sauce:
Cover with the grilled chicken and shredded mozzarella cheese:
Broil until the cheese melts and becomes bubbly. Slice up, serve and enjoy!
Frequently asked questions
Yes, you may skip the spinach in the sauce if you aren't a fan. I personally love the flavor and color it adds.
Yes, you can skip the chicken and make this a cheesy alfredo flatbread instead. You can also sauté some sliced mushroom and add that instead of chicken for a vegetarian version!
You can replace King's Hawaiian rolls with any other bread that you like. For example, you can get a large ciabatta roll or French baguette and cut it into half. You can also use frozen pizza dough or naan as the base!
This flatbread is best eaten fresh. However, you can keep it in an airtight container in the fridge for 3-5 days, and reheat in a toaster oven / regular oven to eat.

Description
The yummiest and easiest chicken alfredo flatbread - crispy and cheesy with a delicious spinach alfredo sauce and juicy grilled chicken
Ingredients
Grilled Chicken:
- 3-4 chicken tenders (300g, you can also use chicken breast)
- ¾ tsp salt (or to taste)
- ½ tsp pepper
- ½ tsp paprika
- 1 tsp garlic powder
- 1 tsp Italian seasoning (or use a mixture of oregano and parsley)
- 1 tbsp olive oil
Spinach Alfredo Sauce:
- 3 tbsp unsalted butter
- ¼ medium onion, finely chopped
- ½ tbsp minced garlic
- ½ tsp salt (or to taste)
- ¼ tsp pepper
- ½ tsp chili flakes
- ½ tsp Italian seasoning
- 2 tbsp all purpose flour
- 1 ¼ cups whole milk
- ½ cup heavy cream (use any kind of plain cream)
- ½ cup grated Parmesan cheese (freshly grated for best results)
- 1 cup chopped spinach
Assembly:
- 2 packs King's Hawaiian original Hawaiian sweet rolls (24 rolls; do not separate); or other bread of choice
- 3-4 cups of shredded mozzarella cheese
- ¼ red onion, thinly sliced
Instructions
Grilled Chicken:
- Coat the chicken tenders in the seasonings and olive oil
- Heat a pan on medium-high heat
- Cook the chicken tenders until they are cooked through and lightly seared on both sides. Be careful not to overcook; it took me about ~4 minutes per side
- Rest the tenders on a chopping board for 5 minutes. Then chop them into cubes, and toss them on the chopping board to pick up all the juices. Set aside
Spinach Alfredo Sauce:
- Melt the butter in a non-stick pan over medium-high heat
- Add the chopped onion and sauté until it softens, ~3-5 minutes
- Add the garlic and spices, and cook for 1-2 minutes until fragrant
- Add the flour and toast it for a minute
- Add the milk and cream. Turn the heat to low, and cook the sauce for a few minutes while stirring until it thickens up. You don't want it to be too thick, as it will continue to thicken as it cools
- Turn off the heat, and stir in the spinach and parmesan cheese
- Taste and adjust as needed
Assembly:
- Pre-heat your oven to 350F and line 2 large baking sheets with parchment paper
- Divide each sheet of rolls into 2 halves, so you have 4 "flatbread" sheets. Do not divide the rolls. Place them on the baking sheets
- Bake the bread for ~8 min or so until it becomes toasted and lightly golden. Remove from the oven
- Spread the spinach alfredo sauce on top of the toasted bread
- Sprinkle over half of the shredded mozzarella cheese. Then evenly distribute the cubed grilled chicken, and top off with the remaining shredded mozzarella cheese as well as some thinly sliced onion
- Turn your oven to the broil / grill setting (500F with top grill). Place the assembled bread in the oven for broil for ~5-8 minutes until the cheese on top is melted and golden
- Slice up, serve and enjoy!

- You can adjust how much bread you use depending on how heavy you want the toppings to be (e.g., if you want more topping and sauce, you can use 3 halves of the bread rolls instead of all 4)
- This flatbread is best eaten fresh! You can prepare the chicken and sauce in advance and assemble and bake the bread in smaller portions so you can always enjoy it fresh

I want to make this and bring to a friend’s house. Can I prepare all the ingredients chicken, sauce etc and put assemble it at my friends?
