Components of these mini chicken fajita pizzas
These mini pizzas are made with 4 simple components:
- Slider Buns – King’s Hawaiian Slider Buns are perfect here—their soft, slightly sweet flavor pairs so well with the spicy fajita topping. Plus, no need to fuss with pizza dough! Can’t find King’s Hawaiian? Any mini slider buns will work just fine.
- Chicken Fajita Topping – This bold, flavorful topping is made with tender boneless chicken, onions, and bell peppers, all coated in my signature spice blend and cooked over high heat for that irresistible smoky, caramelized finish.
- Pizza Sauce – Use any store-bought pizza sauce you love. My personal go-to is Classico’s Fire Roasted Tomato Pizza Sauce—it adds a rich, smoky depth that complements the fajita flavors perfectly.
- Shredded Cheese – For the best melt and flavor, I recommend a mix of low-moisture mozzarella and a Mexican cheese blend. The combo gives you that gooey, cheesy goodness with a little extra flavor kick.


Process with photos

For the chicken fajita topping, start by mixing the cubed boneless chicken, onion and bell peppers in the spices and olive oil:


Cook on high heat until the chicken is cooked and the veggies are slightly charred:


Halve the slider buns and lightly toast them. Then top them with pizza sauce:


Add the shredded cheeses and top off with the chicken fajita mix:


Bake until the cheese melts, then serve and enjoy!


How to get a crispy crust
It's not as easy to get a crispy pizza crust when using sliders. But if that's important to you, here are 2 tips:
- Lightly toast the sliders before assembly
- Layer the cheese before the sauce! Or don't put too much sauce and serve it on the side. This will prevent the bread from getting soggy
Frequently asked questions
You can use any mini slider buns and slice them into halve to use as the mini pizza bases.
As the breast can soak up moisture, this isn't a make ahead recipe. However, you can make the chicken fajita topping in advance, and then assemble and bake when ready to serve!

Mini Chicken Fajita Pizzas Recipe
Description
Mini chicken fajita pizzas made with King's Hawaiian slider buns and a spicy and delicious chicken fajita topping
Ingredients
Chicken Fajita topping:
(note: this makes a little extra topping so you can either make more pizzas, or save the topping for other uses like tacos, quesadillas or sandwiches)
- 1 lb chicken tenders, cubed
- 1 small or ½ large yellow onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 tbsp olive oil + more to fry
- 1-2 teaspoon salt
- 1 ½ tsp cayenne
- 1 ½ tsp paprika
- 1 tsp chili flakes
- 2 tsp garlic powder
- Juice of ½ lemon
Assembly:
- ~¾ cup pizza sauce
- 2 cups shredded cheese (I recommend a mix of Mozzarella and Mexican Blend)
- 12 King's Hawaiian Original Hawaiian Slider Buns, separated into 24 halves
Instructions
Chicken Fajita topping:
- Mix the cubed chicken, onion, and bell peppers with olive oil and all the seasonings in a bowl
- Heat a little more oil in a large frying pan. Add the fajita mixture and cook on medium-high heat for ~10 minutes until the chicken is cooked and the veggies are slightly charred and caramelized. Taste to adjust seasonings, and end with the lemon juice
Assembly and baking:
- Pre-heat your oven to 350F and place the slider bun halves onto a large baking sheet (I recommend a light colored baking sheet). Bake for 5 minutes to lightly toast the buns, then increase the oven temperature to 400F
- Top each bun with a little pizza sauce (avoid too much as it will make the pizzas soggy). Then add the shredded cheese, and top off with the chicken fajita topping. Optionally, add thinly sliced bell peppers on top for decoration
- Place the sheet back in the oven for just a few minutes until the cheese melts. Be careful not to overbake as the buns can burn on the bottom
- Garnish with parmesan cheese (optional), serve and enjoy!
