WHAT IS A SINGLE SERVE BROWNIE?

The term “Single Serve” describes any recipe which makes only one serving, meaning it is perfect to feed just one person. These recipes are ideal for people who live alone, want to bake on a budget, or want to watch their portions.

As the name suggests, a single serve brownie is basically one brownie!

TIPS TO MAKE THIS SINGLE SERVE FUDGY BROWNIE

Although this recipe is super simple, you can make it even better by following these tips:

  1. Accurately measure the ingredients! Use standard baking spoon measures, and make sure to fluff up the flour and cocoa powder before measuring them
  2. Use high quality dark chocolate, ideally between 65-70% cocoa. I have always had the best results with Valrhona Caraibe
  3. Don’t reduce the sugar. After a lot of testing, I have found that reducing the sugar in a brownie makes it less moist and fudgy, and also reduces its shine. If you’re worried about the sweetness (which I don’t think you should be), you can use a darker chocolate
  4. Really whisk in the sugar! This helps get the shiny crust of a brownie
  5. Don’t over-mix after adding the dry ingredients. Just gently fold until combined
  6. Do not over bake. Brownies should be quite soft when removed from the oven, as they then develop a fudgy texture when they cool down

FREQUENTLY ASKED QUESTIONS

What should I bake this single serve brownie in?

I used a mini loaf pan to bake this single serve brownie. Alternatively, you can also divide the batter between 2 small muffin cups, or in 1 large ramekin! Just keep in mind that the baking time will vary depending on what you bake the brownie in.

What can I substitute the egg with?

You can substitute the egg with 1 tbsp of yogurt, but note that the texture and flavor will be affected.

Can I double or triple this recipe to make more brownies?

Yes you can, but if you’re not making a single serve brownie, I suggest making a full batch of my favorite fudgy brownies instead!

SINGLE SERVE FUDGY BROWNIE RECIPE

by Zoha Malik

The most incredible, gooey and fudgy single serve brownie you will ever make!

Yield:1 brownie

Prep Time:
5 mins
Cook Time:
15 mins
Total Time:
20 mins

Ingredients

  • 1.5 tbsp unsalted butter (21g)
  • 20g dark chocolate, 65-75% cocoa
  • 2 tsp cocoa powder (I prefer dutch processed)
  • 1/4 of an egg
  • 1.5 tbsp granulated sugar (21g)
  • 1 tbsp brown sugar (13g)
  • 1 tbsp all purpose flour (8g)
  • 1/8 tsp salt
  • 1 tbsp chopped milk chocolate or chocolate chips (or to taste)

Instructions

  1. Pre-heat oven to 335F (conventional) and prepare a mini loaf pan / ramekin / muffin cups by brushing with butter or nonstick spray
  2. Add the butter and chocolate to a small heat-safe bowl, and microwave in 15s increments until they are melted and warm
  3. Add the cocoa powder and whisk it in
  4. Break one egg in a separate bowl and whisk to break it down. Take 1 tbsp (which is about 1/4 of an egg) and add it to the batter. Whisk it in
  5. Add the granulated sugar and brown sugar, and whisk for a good 1-2 minutes
  6. Sift in the flour and salt, and use a small rubber spatula or spoon to gently fold it in
  7. Lastly, fold in the chopped chocolate or chips
  8. Pour the batter into the mini loaf pan
  9. Bake for 15-18 minutes until the brownie is set on the edges but soft in the middle. A toothpick inserted in the middle should come out with sticky crumbs on it (but not wet / liquidy)
  10. Enjoy!

    1. Zoha Malik

Hi Anna! That shouldn’t be happening. Are you sure your oven is correctly calibrated? Did you pre-heat it before you started baking?

  9. Liz

You mentioned the gram measurements for most of it except cocoa powder. When I looked it up online it says 2tsp of cocoa powder is 11.38 gms (2tsp). But you say that flour is only 8gms (1tbsp). Isn’t flour and cocoa powder the same consistency? So how is Google saying I need more cocoa in gms but in terms of spoons tsp is smaller than tbsp. Could you give the right measurement for cocoa used?

And also the video tutorial isn’t attached in this page? Is there a link I can see it at ?

    1. Zoha

Hi Liz. Flour and cocoa powder are not the same density, so they won’t be the same grams. However, the reason why cocoa powder is not mentioned in grams is because most kitchen scales are not accurate with such a small quantity (2 tsp). The measurements provided are correct.

  10. Kelly

This was quick, easy and yummy. I also for once had all the ingredients I needed on hand.
    Thanks!

  11. Lisa

I loved the fudgy texture. It was just right. However, it was too sweet for my taste. I wonder if cutting the amount of sugar would affect the texture? I am not sure.

    1. Zoha

Hi Lisa! You can definitely decrease the sugar but the texture won’t be as fudgy then

  12. Rama

Looks amazing!! Would be great to make a single one and not gorge on the whole batch 😂
Can i skip or sub the egg? Will it still work?

    Thanks much! ❤️

    1. Zoha

Hi Rama! I haven’t tried skipping or subbing the egg but do let me know how it goes it you do so 🙂

      1. Vanya Manthena

        Hi Zoha!
Thanks for sharing this recipe. I made this once and it turned out great.
I wanted to make this again but this time I substituted egg with greek yogurt and it just wouldn’t bake.
Should I adjust the temperature or time when substituted with greek yogurt?

        1. Zoha

Hi Vanya! Unfortunately I have only tested this recipe with egg so can’t make recommendations about greek yogurt.

          1. Pepper Lino

Brownie recipe was good and easy though when I baked it I baked it for 18 minutes and it wasn’t cooked at all so I cooked for another 10 minutes but it still wasn’t really cooked only crusty at the top but I still ate it slightly raw and it was amazing 🤩
