Description

The most incredible, gooey and fudgy single serve brownie you will ever make!


Ingredients

  • 1.5 tbsp unsalted butter (21g)
  • 20g dark chocolate, 65-75% cocoa
  • 2 tsp cocoa powder (I prefer dutch processed)
  • 1/4 of an egg
  • 1.5 tbsp granulated sugar (21g)
  • 1 tbsp brown sugar (13g)
  • 1 tbsp all purpose flour (8g)
  • 1/8 tsp salt
  • 1 tbsp chopped milk chocolate or chocolate chips (or to taste)

Instructions

  • Pre-heat oven to 335F (conventional) and prepare a mini loaf pan / ramekin / muffin cups by brushing with butter or nonstick spray
  • Add the butter and chocolate to a small heat-safe bowl, and microwave in 15s increments until they are melted and warm
  • Add the cocoa powder and whisk it in
  • Break one egg in a separate bowl and whisk to break it down. Take 1 tbsp (which is about 1/4 of an egg) and add it to the batter. Whisk it in
  • Add the granulated sugar and brown sugar, and whisk for a good 1-2 minutes
  • Sift in the flour and salt, and use a small rubber spatula or spoon to gently fold it in
  • Lastly, fold in the chopped chocolate or chips
  • Pour the batter into the mini loaf pan
  • Bake for 15-18 minutes until the brownie is set on the edges but soft in the middle. A toothpick inserted in the middle should come out with sticky crumbs on it (but not wet / liquidy)
