Description
The most incredible, gooey and fudgy single serve brownie you will ever make!
Ingredients
- 1.5 tbsp unsalted butter (21g)
- 20g dark chocolate, 65-75% cocoa
- 2 tsp cocoa powder (I prefer dutch processed)
- 1/4 of an egg
- 1.5 tbsp granulated sugar (21g)
- 1 tbsp brown sugar (13g)
- 1 tbsp all purpose flour (8g)
- 1/8 tsp salt
- 1 tbsp chopped milk chocolate or chocolate chips (or to taste)
Instructions
- Pre-heat oven to 335F (conventional) and prepare a mini loaf pan / ramekin / muffin cups by brushing with butter or nonstick spray
- Add the butter and chocolate to a small heat-safe bowl, and microwave in 15s increments until they are melted and warm
- Add the cocoa powder and whisk it in
- Break one egg in a separate bowl and whisk to break it down. Take 1 tbsp (which is about 1/4 of an egg) and add it to the batter. Whisk it in
- Add the granulated sugar and brown sugar, and whisk for a good 1-2 minutes
- Sift in the flour and salt, and use a small rubber spatula or spoon to gently fold it in
- Lastly, fold in the chopped chocolate or chips
- Pour the batter into the mini loaf pan
- Bake for 15-18 minutes until the brownie is set on the edges but soft in the middle. A toothpick inserted in the middle should come out with sticky crumbs on it (but not wet / liquidy)
