EASY CHOCOLATE STRAWBERRY MUG CAKE RECIPE

Description

Two delicious chocolate mug cakes topped with chocolate covered strawberries made in just ten minutes, making them the perfect date night dessert!


Ingredients

Cakes:

  • 6 tbsp whole milk
  • 10 chocolate cream cookies (e.g., Back To Nature, Oreo)
  • 1 tbsp vegetable oil
  • 1 tbsp sugar
  • ½ tsp vanilla
  • 1 tbsp all purpose flour
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Topping:

  • 1/2 cup chopped milk chocolate
  • Vegetable oil as needed 
  • 6 strawberries, roughly chopped

Instructions

  • Add the milk and cookies to a bowl, and use a fork to crush the cookies until there are no big chunks remaining
  • Add the oil, vanilla and sugar and whisk to combine
  • Sift in the flour, cocoa powder, baking powder and salt, and whisk until just combined
  • Divide the batter evenly between 2 microwave safe mugs (10-12oz)
  • Microwave the mugs one by one for 60-90s until the cakes are done
  • In the meanwhile, melt the chocolate over a double boiler (or in the microwave but heat in only 10 second increments and slowly stir between each until melted). Add vegetable oil as needed to make the chocolate runny / pourable
  • Once the cakes are done, cover them with the chopped strawberries and pour over the melted chocolate. I like to eat them warm, but you can also let them cool down a bit before adding the toppings
  • Serve and enjoy!

Notes

  • These cakes are best eaten the same day
  • You can easily halve this recipe to make a single serving
